Iberian "vela" chorizo made entirely by hand from selected meats of our own acorn-fed iberian pigs.

The mince is slightly finer than in standard chorizo. Its slender shape allows a faster curing, resulting in a more delicate flavour and a juicy, fibre-free texture.
