The term "pata negra" comes from the dark hoof of the 100% pure Iberian pig. Not all Iberian pigs have a black hoof — crossbreeds with Duroc have lighter hooves — but the black colour is indicative of the pure Iberian breed. Without an official black seal and PDO certification, the term "pata negra" on a label carries no legal backing.

The price of pata negra ham varies by weight and curing time. Three factors drive the cost: 100% pure Iberian pigs are more expensive to raise than crossbreeds; real acorns are only available from November to February (montanera season) and not always in the same quantities; the minimum curing is 36 months, with some pieces exceeding 48.
The minimum reasonable price for a certified PDO pata negra ham of genuine quality is between €380 and €450 for a 7–8 kg piece. Lower prices in the market usually correspond to other categories — 75% acorn-fed, grain-fed — or to producers without PDO certification. The price per kilo of an authentic pata negra ranges between €45 and €60.
