What direct sale means in practice
Direct sale means there is nobody between the cellar and your table. No distributor, no platform adding a margin, no chain deciding which pieces come in and which don't. We produce, select and ship. The price you see on this page is the factory price: what it would cost if you came to pick it up in Guijuelo yourself — except we bring it to you.
That has two practical consequences. First: quality stays under our control from start to finish, with no intermediate stops or third-party warehouses. Second: if something isn't right, you speak to the person who cured your piece, not a generic support service.
Why Guijuelo is the finest home of Iberian ham
Guijuelo sits at the foot of the Sierra de Béjar, at around 1,000 metres of altitude. It is one of the highest ham-curing areas in Europe. The dry northerly winds and the long, cold winters allow a slow natural cure, without chambers or dehumidifiers. The salt penetrates evenly, the enzymes work slowly and the result is a recognisable sensory profile: lower perceived saltiness, more pronounced sweetness, a long, clean finish, smooth fat that infiltrates without saturating.
In 1986, producers from Guijuelo founded the first Protected Denomination of Origin for Iberian ham in Spain. Hernández Jiménez was among the co-founders. Forty years later we are still doing the same: acorns from the dehesa, cold from Béjar, time.

How we ship the ham
We take as much care with the packaging as with the piece itself. Rigid reinforced cardboard box, insulating material for large pieces and vacuum bags for sliced product. Cured ham doesn't need refrigerated transport: it is stable at room temperature thanks to the natural cellar cure.

Frequently asked questions
How long does an opened ham last?
A whole piece well kept in a cool, dry place, covered with its own fat and a clean cloth, lasts perfectly between 3 and 6 weeks depending on humidity and temperature. More detail in the guide on how to keep your ham.
Can I order my piece already boned?
Yes, at no extra cost. Write to us before closing the order or note it in the cart and we'll bone it in the cellar before shipping. We also offer knife-carved sliced format.
Do you have a guarantee if I don't like it?
If the problem is attributable to the product or the shipment, yes: full refund or replacement of the piece, your choice. Consumer law doesn't allow returns for change of taste in food products, but before you buy we advise you so you don't get it wrong.
What exactly is the Guijuelo PDO?
