Guijuelo Iberian ham represents the pinnacle of Spanish charcuterie. At Hernández Jiménez we produce Iberian hams with 100% acorn-fed Iberian pork, protected under the Guijuelo Protected Designation of Origin since 1890. Guijuelo, in the sierra of Salamanca, concentrates the ideal microclimate for the natural curing of Iberian ham: dry cold in winter, moderate temperatures in summer. These conditions cannot be replicated in a cold room. Each ham spends between 24 and 36 months in our natural drying rooms, depending on the weight and category of the piece, until the master carver decides it has reached its optimum point.
